Vegetable kebab made in air fryer - delicious snack without any oil !
Boil 2 potatoes and peel them and keep them aside
Blanch two fist fulls of spinach. Boil them in hot water for a couple of minutes and then dip them in ice cold water. Blanching lets you get the water out of spinach so the kebab is not soggy. Once in the cold water for a couple of minutes, take the spinach out and press it hard to get the water out
Cut 1 large capsicum into small pieces
On a pan heat the capsicum, add ginger, green peppers
Add mixed vegetables while cooking the capsicum
(If you want to make hara bara kebab, just use green peas and green beans instead of the mixed vegetables)
Add salt, coriander powder, cumin powder, cardamon powder, chilli powder, ajwain, hing and turmeric
Do not cook too much. Just need to soften the vegetables a bit
Transfer the spinach and the semi cooked vegetables to a grinder and run it for about a minute
Mash the potatoes and add to the vegetables. Potato is a good binding agent but you will see that the mixer is still a bit wet so you cannot make a ball shape with it
Add 4 table spoons of chick pea flour and 2 table spoons of almond flour
Once the flour is mixed in you should be able to make a ball shape with the dough
Cover the air fryer pans with a baking sheet
Make small balls of dough and press them in the middle to make kebab patties and place them on the baking sheet
Heat in the air fryer at 400 deg F for 45 minutes
