Vegetable Stir Fry
Ingredients
One large beet
Chana dal
Mushrooms
Yellow capsicum
Onion
Ginger
Chilies
Cumin
Mustard
Lime
Salt
Cilantro
Balsamic Vinegar
Brown Rice
Instructions
Chop the beet into small cubes
Pressure cook beets, chana dal, and brown rice in 3 separate containers
Hint: Cook for 9 whistles as dal takes a while to soften
Chop onions, mushroom, capsicum
Heat a non-stick ceramic pan and sauté the chopped onions
Hint: Instead of using oil to sauté, use balsamic vinegar
Add ginger, chilies, cumin, and mustard
Stir till onions brown
Add the capsicum, mushroom and continue to sauté for 5 minutes
Take the chana dal and beets and rice out of the cooker and strain them to drain out water
Add the strained chana dal and beets to the pan
Sauté for a few minutes
Add rice to the sauté and stir for a few minutes
Add salt and lime to taste
Garnish with cilantro
Enjoy the healthy and tasty stir fry. No oil.
